Athena was an amazing server. We went with all her recommendations and enjoyed our meal! The restaurant is beautiful and the staff made we feel really special on my birthday. I loved the spicy rigatoni, lobster, cheesecake, and hazelnut chocolate cake.

Our boss took us here for dinner over Labor Day weekend and we all enjoyed the food tremendously! I heard getting a reservation here is hard and you need to book ahead of time. Luckily our boss made reservation and our party of 8 were seated at a spacious booth when we checked in. All the staff here were very polite and our server was wonderful! Needless to say, we enjoyed every dish so very much! We ordered so many things! Mixed baked clams - we got two plates of this and we enjoyed it so much that we also got another plate with just the uni clams! So delish! Grilled octopus - this was my favorite, next to the pork chop! The octopus here was so fresh and cooked to perfection that it was so tender and it melted in your mouth even though the outside were crunchily grilled, full of flavors! Beets salad - I love beets salad and this was so refreshing! We also got the other salad with vinaigrette and I think we got 2 orders of that so the salad plate was huge! Caprese salad - our boss loved this so he ordered double the mozzarella, oh so delish! Spicy rigatoni - oh my my! We also go 2 orders of this in one plate, it was so so so good! This is the best cheat meal ever! So full of flavor and so creamy cooked al dente! Perfection! White butter fish - Sorry by this time I could barely remember what we ordered and ate and the fish was also so delish. Double pork chop - this was the winner! I don't usually eat pork because it is so fatty and fatty was all this bad boy was! But oh it was so good! I never ate pork medium rare and ... the outside were crispy and so flavorful and the meat was so tender and juicy and all the umami in every bite and every taste! It was so so good and I love the caramelized veggies with it. We were all so full because we got at least 2 orders of everything! But as full as we were, we could not pass up desserts and the carrot cake and tiramisu were what we got and oh man, the carrot cake was it! It was sooooo good! I highly recommend you check this restaurant out, it should be on your list to try at least once when you're in Vegas!

Almost impossible to get reservations for Carbone in NY, but we managed to snag one for this Vegas location (inside Aria). We made a reservation for 8pm on a Thursday and needed the full party present to be seated. The restaurant was hustling and bustling with a lot of foot traffic going in and out. Every table was filled, but since our party was pretty big, we got a private room. Private room was ideal for an intimate setting, but there were windows for people to peer into our room like an exhibit so it felt rather invasive. When we asked if we closed the curtains, we received a curt "no" from our main server. Honestly, service wasn't the best and it didn't seem like they warmed up to until they saw we were close to hitting the minimum amount we had to hit per person. We were also thrown off when a server snapped back at another server and said he could "do whatever he wants" Service may have been lackluster, but I'm glad some of the food made up for it. All the appetizers we ordered were amazing! Highly recommend: -Calamari -Beef Carpaccio -Octopus (so tender!) -Caesar Salad -Stuffed Clams As for the pastas, I was a little disappointed with it. Maybe it's because of the hype around the spicy rigatoni, but the dish arrived cold and lacked in freshness. Felt like i've had better spicy rigatoni before. We also ordered two ribeyes for the table to share. Ribeyes were cooked perfectly to a medium rare, but aside from that nothing really stood out about it. The plethora of appetizers we ordered were enough to make Carbone well worth it though. Glad I was able to try it! WARNING: the espresso martinis are strong af and will keep you wired the entire night!!!

After trying Carbone for the first time at Aria earlier this year, I went back to LA still thinking about the spicy vodka rigatoni. Came back again a month later and made sure to make a reservation at Carbone. On my most recent trip, I had Parm spicy rotini (food court version of Carbone) for brunch and dinner at Carbone again. Too delicious! Aside from the infamous carpaccio and spicy rigatoni, one of my absolute favorite side dishes was the pickled cauliflower and parmigianno. Heavenly! It goes so well as a palate cleanser. I highly recommend making a reservation here to complete your trip to Vegas!

Seeing that Carbone was only a brief walk from the hotel, I figured it was a good time to try them out. Thanks to the new walkway between hotels, I only had to be outside in the heat for a short duration from Vdara to the Aria. I heard it's impossible to get reservations unless you do so months in advance, but I just wanted to inquire about the bar area. It was about 10:15p when I walked in (the doors are shut and it may look closed, but they close at 10:30p) to the hostess stand, and she was attentive right away. Seeing I was in gym clothes, I'm still impressed they bothered to pay me any attention, much less fit me in for the following evening. I was looking forward to this dinner! More appropriately dressed the following evening, I confirmed my reservation to the hostess, and was directed over to the bar. Once seated, the bartender then again confirmed my name, and everything went smoothly. Right away, the starters came out which I was not prepared for. First up was some chopped parmesan cheese, and talk about a bread basket; this is something you could get full off of. I didn't touch the beautifully-presented salami or the pickled cauliflower 'dip' but momentarily forgot I didn't like the latter by dipping a piece of bread into it (won't do that again but glad I tried it). There were two kinds of bread I devoured (garlic piece and the one with sesame seeds), but I left the tomato-based one since I wanted to save room for my main plate. Which of course was the Spicy Rigatoni Vodka I've heard so much about. I had the bartender douse this with cheese, and I was on my way. The texture of this was the best part for me; al dente, and the taste had a slight kick to it for me and my mild taste. I was able to savor this dish and while doing so, notice that the person next to me ordered the same thing which I guess shouldn't surprise anyone. The dessert cart was in my eyeline, but I skipped this; opting for their Italian Rainbow Cookies that I favor (see attached photo). As for the atmosphere, the word that comes to mind was 'lively'. Pretty much after their doors opened, there was a steady stream of people being walked back to the dining room (which was dimly lit and beautiful), servers rushing about, the music was loud and expected of this establishment. The bar itself maybe had 12 or less seats, and all were taken by the time I had departed. Restrooms were also nice, and the handicapped stall was basically a room in itself. In all honesty, I'm happy to say service was actually the best part of Carbone. My water glass was never empty thanks to Bernard who was an engaging and awesome bartender; you will feel as if you've known him for life. The servers who dropped off the bread/pasta. The lovely host who booked me the previous night was the same one today (Yessi) and I thanked her for taking me in last minute. Manager was also friendly, and was able to take a few minutes out of the busy evening to chat. I don't have any of my usual keepsakes (pens, matches, or cards, hence why I'm blanking on the name of the manager) to prove I was there, but I know I'll be back to enjoy possibly another pasta dish (ragu!) on their menu for a future visit.

Place was absolutely booked on Sunday night, but somehow managed to grab a last minute reservation. Highly recommend booking well in advance. Service was phenomenal and all the of the staff were friendly. Everything was amazing from start to finish. Our waiter was attentive, our sommelier was very knowledgeable and had great recommendations. We ordered the caprese salad (10/10), prosciutto and mozzarella (8/10) as appetizers to share. My favorite pastas were the spicy vodka rigatoni and lobster ravioli, but the spaghetti fell short of expectations. For dessert, the carrot cake and cheesecake were the best ones we had. Only downside was the lighting inside, it matches the vibe, but it's a bit dark for me.

Wow wow wow. I was skeptical going into our reservation because of all the hype around Carbone, but my friends and I were blown away. Great service and ambiance, even better food. To start, I'd like to point out that our server was awesome and asked us if we had a show to catch so he can make sure we were out of there on time. So considerate! We let him know we were watching Love at 7pm, and we were able to make it back to the Mirage (RIP) with plenty of time to spare. We enjoyed everything we ordered - and didn't order! The complimentary bread, pickled cauliflower, salami, parmesan - all 10/10. Our mains were the spicy rigatoni, salad, and roasted potatoes. We were so full from the apps that we couldn't finish our main, but I'll never complain about having leftovers! Lastly, the rainbow cookies were brought out to us and I was suddenly ready to eat again. These cookies were amazing, and I still look back on them weeks after our trip. Overall, we had a wonderful experience! If you can snag bar seating or an early reservation, I'd highly recommend.
